These northeastern UNITED STATES native berries are incredibly healthy because of their health benefits. It becomes part of daily cooking many ways them more. We are fortunate to have this growing in our backyard but not enough to fill a pie. We visited to see how they are growing by local farmers and collect a bunch to use or freezer it to preserves the flavors of summer.

Preheat oven to 350° 25 Minutes. Prepare your muffin thins ready by brush Olive oil or Coconut oil. Blend dry ingredients well in a medium bowl. Set aside. Smash banana into the bowl, add eggs, vanilla, add butter or coconut oil mix. You can slowly add liquid ingredients star bleeding well. Add blueberries and folded them in instead of vigorous blending to prevent berries from getting crushed.

Blueberries are the goddess of all the berries. Especially when you can have a lot of during its pick season. We collected a lot to the freezer and baked, especially Blueberry Pie, one of my favorite Berry pie of all time. There are 13 farms in Connecticut growing very of blueberries.

Ingredients

  • 2 cups gluten-free baking flour
  • 2 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted soft butter
  • 2 large eggs
  • 2 tbsp sugar alcohol or monk fruit sweetener
  • 1 Ripe banana
  • ½ tsp Vanilla
  • ½ cup unsweetened almond milk
  • 2 cups Fresh blueberries
