I am happy to share my story of relearning how to cook gluten-free at home. The past decade has been an eventful journey of discovery about how to change my diet. I was diagnosed with gluten sensitivity. After getting used to the American diet, I realized I got away from my native diet I grow upon for over 25 years. And my body is reacting to it. I was constipated, blooded, irritated, imagine not having to be able to go and take care of business. It was a difficult time.
The First step of healing is to excepting listening to your body. In this case, Most specifically, listen to what your gut tells you. The gluten-free diet has not been easy to get used to by any means. Whenever I want to enjoy my favorite pastry, I can’t help think how much trouble I will be in later. Thankfully I can have—I wanted to share with you my recipes years of cooking at home. Cooking is a therapy that always helps me be creative. Growing up on a Mediterranean diet was terrific—especially the Black Sea diet. Long story short is a hard truth I had to deal with. Fortunately, I am open-minded when it comes to cooking.
